What sort of documentation should I keep if I change the oil myself? Does anyone do more than simply keeping the receipts? Any personal experiences?

Basically, I do not want Subaru saying 'you haven't visited us for an oil change in X miles so we won't service your problem under warranty.' This may sound paranoid, but better safe than sorry.

Anyone had personal experience with a warranty issue if you have done your own maintenance work?

I keep an Excel spreadsheet for each of my cars where I record gas fillups (it calculates mpg for me) as well as any maintenance. Just the modern version of the little car notebook.
