Not to turn this into a tech forum or anything but can you tell me why I would want to go with the carbon plates on my STi. I have never heard a bad word about the twin carbon disc but can't see a reason for it. Would the single disc be acceptable? Or are the basic clutches worthwhile? Why carbon over organic or ceramimetalic?

The carbon clutches have a smoother engagement when cold vesus the metalic clutches which tend to be quite harsh. The carbon also tends to last slightly longer. Twin discs usually support more power, and the engagement is not usually quite as hash as a single with there being 2 discs to "slip."
