Sometimes when I get close to stuck in mud or snow and I'm trying to spin my way out, there's this god-awful stench. What is that? Center differential? Rear differential? Combination of both?

Burning mud maybe?
Mud + hot exhaust probably = bad smell.

I ran over an already dead deer the other day. Rotting deer carcas+hot piping= really, really awful stench.

Glad to see I am not the only one that loves to inhale deeply after getting the car covered in mud.

Swamp mud burning off the headers is the best, although clay on the diff is pretty good too.

And then you get those little hiss POP noises as the headers and stuff cool down and then the steam from the mud.... yum, it is great stuff!

You think that smell is bad?

The worst is swamp mud + gear oil. Especially the day after, when you drain the diffs (in a FJ40 Landcruiser) after repeatedly submerging the pumpkins in mud...
