You won't reach the point where you need a closed deck. With an ej257 you get better piston design, more displacement, newer crank design, and they are readily available and are proven to make good usable power if tuned well. Now if you are building a motor that is a different story.
Especially with the prices 257s are right now, this plan really does make the most sense. If you're set on added displacement, 257 is the way to go. Personally, I prefer the 207s, but it sounds like you are only looking to replace the shortblock.
