The coolant temp sensor was most likely the cause of your problems. When it fails or goes out of range the ECU does not get the proper information it needs to set the fuel mixture for starting and running. The result is symptoms like you have been experiencing.
The oil pressure sensor is only there to operate the warning light or gauge on the dash and would not have any effect on how the car runs. If it's being replaced it was either leaking or not reading correctly.
