Unfortunately the newer hill holder is all electronic via the VDC. It can only be turned off in the STI.

The newer one is a little slower to release than the old hill holder, like it has to realize the car has started to move before it lets go where the old one was linked to the clutch pedal. I've totally gotten used to it. But you can't be the cool kid that advertises to the world you still drive a stick by rolling back a li'l before you take off. I can live with that.
