That's a good summary.
I think folks have done more to make big power with the EG33s - I'm sure to some extent that's because they've been around longer. And as 2006eg33 said, they're basically a bigger EJ22, so bulletproof rotating assembly parts are plentiful.
From the ease of fitment standpoint, one of the EZ30s would be the way to go. The '05 Legacy (in the Outback guise) was available with an EZ30R, so that will fit right into the car. Using the '01-04 EZ30 will make the wiring easier, as you can use the factory ECU that came with that engine. The '05+ EZ30R, which has AVCS and AVLS, plastic intake manifold, drive-by-wire throttle, and makes more power, will require some more work. Your '05 Legacy may (probably?) already have the immobilizer, so maybe it wouldn't be as hard to make the factory EZ30R ECU work in your car.
