Would it help? Sure. Would it help much? No. The problem is that there isn't enough thermal mass there that it's going to keep things cool. This is essentially what putting meth into the intake does. So if you really want to do this, have the cold spray hooked up to spray into the intake charge. It will likely get you an additional 3ms off your 1/4 mile time, however the added weight of the cold spray can will lose you 10ms on your time.

Dry ice is better, packed around the intercooler/intake piping. It doesn't leak into a liquid like ice. A really scummy way to win against someone running ice is to wave at the track officials and tell them that you're leaking fuel. You get DQ'd and they win. Dry ice doesn't do this.
