Well, they will flow your head and get flow numbers...call cobb tuning and ask what their flow rates are on their heads to give the shop an idea of what can be done.
Bringing the inatke manifold is a good idea too.
As for valves...i would leave those alone for now, only mess with valves/springs and retainers when you raise the redline with a mean set of cams, otherwise its not worth the time and money. Trust me
