I think, if you have the time and money, it would be a mildy interetsing intellectual exercise at best. There are better 'fun' projects around. Swapping in an H6 as mentioned, making a dual engined car (front and rear engines), an 'articulated' offroader, a true midengined soob, building a supercharged engine, building a steam powered boxer, diesel conversion, etc. There is a reason going the direction you suggest is rare, yet there are websites and numerous examples devoted to putting soob engines in places that WERE VW and Porsche - they are more reliable.
