The reason the widths of the wagon and sedan are different is because Subaru races the sedan configuration in the FIA World Rally Championship. In race configuration, it's got a lot of rubber underneath it, so it needs to have the wider, flared fenders.

The wagon wasn't designed with this race series in mind, so they just went with the standard Impreza wagon fenders, presumably to keep costs down.

I imagine at the absolute limit, the slightly wider track of the sedan would have a bit better handling (though a slightly stiffer chassis and that 20mm sway bar would probably account for most handling differences), but the main reason the sedan has a wider track is to "fill out" those flared fenders a bit better, for appearance reasons.
