Default Custom exhaust shop capability

How well should a competent exhaust shop custom be able to bend a midpipe so that it sits high in the exhaust pipe channel to maintain ground clearance as stock? Also curious if this process is trial-by-error (eyeball?) or if they would use a template of some sort (computer?) for fitment accuracy. To me, clearance may be the difference between getting a custom job or sucking it up and buying a Stromung, assuming their fitment is good.

Also, assuming a stock header and cat section, would an unresonated midpipe coupled with, say, a Borla or other "moderate" universal muffler be droning or stupid-loud?
