You can use an EJ257/255 shortblock with EJ205 heads, but if you plan to go for a lot of power it can be hard due to the engine being more prone to knock. You can get around this by tuning it a little more conservatively, but it isn't an ideal solution.
If you find heads from a 2004 STI they have the bracket on them for the CPS to use from your wiring harness, you just have to drill and tap a hole to hold the sensor to the bracket (I've got a set of heads in my garage, but they need valve work).
You can use newer STI heads, but you need to buy an aftermarket bracket.
There's quite a few ways to throw it together, and it all depends on what your budget is to get your best bang-for-your-buck.
The factory shortblocks with 2.0 heads can be pretty strong - We got Cody's into the low 11's (should have been 10's with a better driver) in the quarter mile. It should have been around 480 WHP judging by trap speeds, but it was just road tuned, so we never actually knew.
