Well the forester xt while being a great car is just so boring in stock form so I have been contemplating buying an 05-07 STI but keeping it stock, I just want something fun to drive to work and around town. My wife made me a deal that if I save 3k then I can go STi shopping, fortunately with my job and few shifts of OT and PT will make that money pretty quickly. So now I find myself with 3k and I have been looking for a clean sti, which I have found to be hard to find. My car payment is next to nothing for the XT and insurance/property tax is also extremely low. So now I am contemplating keeping the XT and putting that 3k into it. Do you think this is a good idea or am I just being anxious??

So, how realistic is it you'd actually keep the 05-07 STI stock? I think you should look for a manual XT to mod. Then you'd still have low insurance, soccer mom versatility, a cool sleeper, and lots of fun to drive. It'd be much easier to find a manual XT than an unmolested STI.
