Does anyone have any insight on whether or not an 04 - 06 EJ257 will bolt to my existing RS 5mt?

Yes it'll bolt up.

would there be any major problems with this set up? other than rifling through the gears like a fat kid looking for candy at the grandparents house?

dude the sticky it'll work everything bolts together... read the sticky its all there

1) yes it bolts up my 5spd was bolted to my 05 STi motor

2) furiously save up money for a stronger 5spd or 6spd as you granny shift/baby the hell out of your 5spd....my 5spd blew 4000 miles into the swap and i am one of the most careful drivers around, YMMV, however.
