Default OFFICIAL - Food/Recipe Thread

Since we all love to eat, I thought it would be a great idea to have an official thread. I am thinking the other threads got closed, because a lot of OT started to go on.

So mods, I am not doing this to start issues, but at least all food talk would be in one location (especially with holidays rolling around).

In honor of LL and Samagon's idea, I created it.

The only real recipe I have for turkey is:

Low sodium soy sauce, garlic, basil, LA hot sauce, and brown sugar. I don't have the exact messurements for each thing, but it honestly depends on how salty, garlicy (?), and spicey/sweet you want it. But put it in a bowl and wisk until its half thick and half liquefied.

Once that's done, soak it in a bag over night, slow cook oven the next morning for about 6 hours. BAM!

Edit: Not my own creation, but have made this Jambalaya before:

Ingredients
2 tablespoons peanut oil, divided
1 tablespoon Cajun seasoning
10 ounces andouille sausage, sliced into rounds
1 pound boneless skinless chicken breasts, cut into 1 inch pieces
1 onion, diced
1 small green bell pepper, diced
2 stalks celery, diced
3 cloves garlic, minced
1 (16 ounce) can crushed Italian tomatoes
1/2 teaspoon red pepper flakes
1/2 teaspoon ground black pepper
1 teaspoon salt
1/2 teaspoon hot pepper sauce
2 teaspoons Worcestershire sauce
1 teaspoon file powder
1 1/4 cups uncooked white rice
2 1/2 cups chicken broth
Directions
1.Heat 1 tablespoon of peanut oil in a large heavy Dutch oven over medium heat. Season the sausage and chicken pieces with Cajun seasoning. Saute sausage until browned. Remove with slotted spoon, and set aside. Add 1 tablespoon peanut oil, and saute chicken pieces until lightly browned on all sides. Remove with a slotted spoon, and set aside.
2.In the same pot, saute onion, bell pepper, celery and garlic until tender. Stir in crushed tomatoes, and season with red pepper, black pepper, salt, hot pepper sauce, Worcestershire sauce and file powder. Stir in chicken and sausage. Cook for 10 minutes, stirring occasionally.
3.Stir in the rice and chicken broth. Bring to a boil, reduce heat, and simmer for 20 to 25 minutes, or until liquid is absorbed.

my recipe for pico de gallo:

in order of adding:
2 bushels of cilantro (leaves only, dice as fine as you can, slap chop could come in handy)
2 giant tomatoes (you can add more if you want) chop, not too small, but not too big.
2 white onions chop, definitely don't chop too small, it releases too much onion juice.
3 jalapenos dice as fine as you can.
2 lemons squeeze juice only, no seeds.
2 limes squeeze juice only.

stir and serve fresh. will still taste good for a week or so.

I'll add my recipe for some really hot salsa soon.

I like this thread!

Tacos:
cilantro
red onion
garlic
jalapenos
ground chuck 80/20
garlic powder
cumin
jar of Paul Newman's medium (or hot) salsa

-Take onion, garlic, peppers and cilantro in a food processor and pulse them until they are slightly smaller than pico.

-Sweat in a pan for a couple of minutes until tender.

-Add beef and stir into the the veggies and brown.

-Season with garlic powder, salt, pepper and a little cumin.

Once brown, turn heat to low and add a half a jar of the salsa and simmer.

Sam's hot salsa:

put all contents into a blender (in order):

1lb tomatoes (small)
2 cloves garlic
2 jalapenos
2 seranos
1 habanero
1/2 onion (white)
1 lime (squeeze juice into blender)
1 lemon (squeeze juice into blender)
1/2 a pack of cilantro (no stems, but you can get a few in there without worry)
a bit of salt

once it is all blended, put it into a container, chop the other half of the onion and toss it in for some substance and stir a bit.

best with unsalted chips.

I like the word "monkey". Got me kicked out of the White Elephant in Cowtown Ft. Worth one time. Come to find out rednecks don't like to be called monkey.

Guinness Pumpkin Pie!




1 9 inch unbaked pie shell
3/4 cup granulated sugar
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon freshly grated ginger
2 eggs
1 3/4 cups canned pumpkin
6 ounces Guinness Stout *Extra Stout bottle, not Draught can/bottle*

Combine sugar, salt, cinnamon, and ginger in a bowl. Lightly beat in two eggs. Stir in canned pumpkin and Guinness beer until well combined. Pour mixture into pie shell; preheat oven to 425F and bake for 15 minutes. Reduce heat to 350F, and bake an additional 45-50 minutes, or until fork placed in center of the pie comes out clean. Cool, and serve.
