Default Recommendation of Head Gaskets

I have an EJ257 with crank, stock STI rods, and CP Piston(100mm), I had 2.5 heads re-done with with Supertech valves 1mm over. I am running the DOM3. What would you recommend head gasket to use. I still want to use the stock OEM head gasket, what do you think...

I used cosworth head gaskets on my last build and can only say good things about them.
Next build I will use them again, for sure.

Again, what turbo and cams? trying to determine your boost and power goals as you can use them to modify compression/quench.

I went from cometic .051, to stock sti headgaskets. I love the bump in compression with the sti gaskets. I will never go back. So much more off boost power. I have also logged 400-500 rpm sooner spool to peak boost ( which was 19psi on booth setup).

stick to the sti ones if less than 25lbs. If you're looking to go above that, I'd lower your compression a bit with 0.51 or even 0.60 cometics to handle the high boost easier. If you're ever considering 35/40rs in later life, I'd also suggest going there.

You will loose a bit off boost but with smart tuning, timing can make up some of it and you'll be safer IMO with a little bit less compression, especially if you do the tuning on the street yourself.
