Default question about egt probe and up pipe

So i was under the impression that when you get a new up pipe, you should get one w/o the egt probe bung becuase the egt probe has a chance of getting too hot or something and putting stuff into your turbo. Now is that true? or is just that by getting an aftermarket up pipe you remove the cat, and the cat is what can break up and fly into the turbo at high enough temps. Or is it both. I was going to buy the helix flex up pipe and on the gruppe-s website they say "The EGT bung is CNC machined out of solid steel to allow the EGT probe to seat properly - threading a metal tube with a washer to seat the probe or removing the EGT probe completely is NOT ok (like some of our competitors). AND i also thought that when you get an EGT guage you shouldnt mount it in the up pipe because those reading arnt the most accuate. Will someone please straiten me out.......

You have the correct idea. If you get a catless uppipe you no longer need the factory EGT sensor (use the resistor fix). When you put an aftermarket sensor on the car it should be close to the head in the exhaust manifold.

Have you read Unabomber's Uppipe FAQ? A lot of good information is in there including the answers into your questions.
