The quality of hot sauce should be judged by one criteria only; how bad it burns coming out the other side.

I make the best hot sauces because I make them the way I like them. My friend Jim Campbell makes excellent sauces for sale:

I have a pepper plant that is native to the mountains above Sebu in the PI. I have no clue what type of peppers they are. My wife calls the leaves (That you can also cook and eat) Saluyot. Those are the hottest peppers ounce for ounce that I have ever heard of. My wife's uncle had them tested and they were 300k scoviels. I soak those in vinegar for about 2-3 weeks and that is the hottest sauce that I have ever had. But for taste, and that is what I would rather have than hot, I go with Batch 114. I do love hot, don't get me wrong, but I need taste to go with it. I love the scalp-itching, nose running hot action. I go to Indian places and order a 6 out of 6 most times. They go to 10, but only tell the white folk about the hot up to 6. I ordered an 8 once, and nearly killed myself.

Oh, and when eating Adobo... Some of those peppers mixed with garlic and cancong (Stalk of a viney plant) soaked in rice vinegar for about 3 months... That is the king of refreshing and bloody hot.

not sure bottle just says peppers, spices and vinegar. I think some sort of habenero. The reason it is so damn tasty though is it has the perfect hint of mustard flavor. The bottles I have had have been brought to me from my aunt who lives in atigua but im sure it is available at nicer grocery stores. Try sum......

Dave's Insanity makes some good stuff. For an everyday spice, I like to use Rub From Hell.

I have a bottle of this in the fridge. It's unbelievably hot. Just a small drop on a toothpick burns for a good half hour.

that hot stuff is kinda cool but after awhile it doesn't even have a good taste. good to spring on unsuspecting family members at thanksgiving, or when your friends are drunk!!!

I personally use Dave's ultimate insanity...
I want to say it's around 600k-800k scoville units.
4 drops on a quizno's sub and my anus burns for about two days.
