Whats the deal with gas grills... why no charcoal?
A few years ago my parents replaced their perfectly good natural-gas grill that also had charcoal. It worked great - I used it all the time. In it's place, they got this lame grill that didn't use charcoal - cooking on it was no different than using a George Foreman grill in my opinion. The grill would get hot, but no flame, and no taste from the charcoal.
Now the GF wants to get a grill, and I am confused as to what to get. All the gas grills we looked at seem to only have the heat source, with no charcoal and no flame hitting the food. We saw a couple charcoal-only grills, but then you have to contend with lighting it, which lacks the convenience of gas. CN: Why no charcoal + gas grills??

The reason flames hit the food on a charcoal grill are the same as why they will hit the food on a gas grill...the juices.
When charcoal is ready to grill on it's not producing a lot of flames, the juice dripping down makes it flame up. |

We have a Webber that is charcoal but lights using a mini propane bottle. Heat up the bricks for 5 minutes or so then turn off the gas. Works great.

Got one of these:
Running on Natural gas, converted to electronic ignition (no more of that rotary crap) and with stainless steel deflector plates instead of lava brick/rock. After the first grilling, enough crap/juice/crud builds up on the plates that there is no difference in taste between it and the lava-rock style grill I used to have. Flames still flare up, and the heat is evenly spread. The only issue with mine is that is heats up a little slower than the propane model it replaced. But once heated up, its fine, and no running out of propane/lugging tanks around FTW! |

If you really know how to cook with a good charcoal grill, with real charcoal, you wouldn't even think of using gas. I use one of these. You can't beat it, except it uses a lot of charcoal.

I bought a Weber 300 gas grill and hated it. 4 out of 5 meals were ruined - dry, burned, etc. My friend who recommended it said he loves his. I hated the flavor, or lack thereof, and the cooking characteristics were odd. So we had a cookoff: his propane Weber 200 vs. my cheapy Smokey Joe with Kingsford. We tried to cook the meat exactly the same.
The differences were very intriguing; taste turned out to be the smallest difference. The charcoal grill had a hotter temp, and the carmelization of the surface definately made the charcoal meal taste a little better. My friend didn't like the Kingsford "polluted" taste. The Smokey Joe's steak looked perfect inside and out: grill marks, dark brown outer layer with a rainbow of reds toward the center. The gas grill was a uniform brown inside and out. Both tasted really good though, but had a different texture. The chicken is where we saw huge differences. The gas grill made the chicken cut like a McNugget; it had a texture of processed frozen fast-food chicken, whereas the charcoal grill made the chicken juicy, and it would tear apart in strings, and the flavor was much more smokey and complex. The gas grilled chicken was quite dry. I sold the Weber 300 and bought a Big Green Egg. The BGE is LIFE CHANGING. I have used it many times and have never been disappointed or ruined a meal. The wife and I will never again go to a steakhouse, because we've never had a steak as good as the ones from the BGE. It is ceramic and uses hardwood charcoal and because it uses less fuel (keeps heat inside) it dries the air less and food is more juicy. I have a collection of various woods for smoking. The BGE has spoiled and fattened us. |

^^ see those differences are exactly why I didn't like the new grill my parents got... I didn't want the GF to repeat the mistake. I knew after getting a lot of flack from the OT, I would finally get some good info.
That Big Green Egg thing sounds cool - might be out of the GF's budget, but when I buy a grill, i'll have to check it out. That one from Walmart looks cool - as much as I hate Walmart, I might have to do a drive-by this week so we can check it out. Also that Webber that lights with propane might be the bestest solution for her. |
