I have had good luck with rubbing wet dryer sheets in the fabric. Even take a laundry detergent that you like, powder form works best. Dilute it maybe like a 1 to 5 and used a soft bristled brush and rub it in the fabric. Usually a couple of cleanings gets all the smell out.

If there is a detail shop nearby that offers ozone treatments try that. Otherwise Oxiclean water and a scrub brush spray on the roof scrub then use a shop vac to remove excess water. If oxiclean is not avaliable try a laundry detergant with a nice scent. Also replace the cabin airfilter if there is one. And clean the seats and carpet in simmilar fasion to roof liner. Also take a fabric softener liquid mix 3:1 with water in spray bottle and spray all fabric with that when your done cleaning.

Do not spray anything directly onto the headliner. If you get it too wet, you will loosen the glue and have a saggy headliner. Not good.

Use a microfiber towel dampened with a 1:6 dilution of Woolite or similar "fine fabric care" detergent (1 part Woolite, 6 parts water). You don't want it wet, you want it slightly damp.

Rub lightly over headliner, turning the towel frequently and changing out the towel or thoroughly washing/rinsing/squeezing out excess water when it become soiled all over. Follow up with a dry towel to help absorb some of the moisture from the headliner.

The headliner is often the biggest source of smoke smell in a car. If, after cleaning the headliner, your car still smells of smoke, I would investigate the ozone treatment and perhaps vent cleaning. Also consider a new cabin air filter.

See this thread on Autopia for some before/after headliner cleaning pics and process:

If he smoked in the car then the vents probably blow out smokey smelling air also if he ran the A/C with recirculating air...try changing the HVAC filter behind the glove box. Some people even put in a laundry dryer sheet on top of the filter for that fresh smell, although I'm not sure how this will affect filter flow, might be worth a try. Tar accumulated on the inside of the windows and other smooth surfaces on the car's interior are probably contributing to the smokey odor, so wipe it all down.

I've heard peanut butter, an apple sliced and placed in a paper bag... really you can try that but you need to remove as much of the smell as possible - which means shampooing carpets (remove those seats), fabric, cleaning all plastic and glass, the headliner especially... lots of surfaces.
