Default Problems after cat install

When I did my swap to my RS I bought a custom fabbed 2.5" catless TBE. It was WAY too loud and wouldn't pass inspection.
It ran pretty good but wasn't very smooth and sounded unhealthy.

I bought a 2.5" cat and put it in the 3rd cat location, unplugged the battery pressed the break to get all the electricity out and it ran pretty good for about 30 mins. Power seemed smoother and exhaust sounded more 'normal'. Now sometimes when it gets to about 3500-4000rpm it bogs down really bad and wont go past that RPM very easy. It seems fine if I start from first and go through all the RPMs, but if I start to hit those RPMs from another gear it hesitates to go past, seems to be not boosting either. I searched around but couldn't find anyone with these issues after INSTALLING cats, always after removing them.

I don't have a boost gauge so I don't know what boost it is hitting/not hitting.

Do I need more time for the ECU to learn the new exhaust setup, or do I have a serious problem?

Just went to autozone to get my CEL code pulled.
P0328, knock sensor. Read up about it, people reported the same "hesitation".
I know what most people say is replace knock sensor, but how often do those things go bad? My engine has <6000 miles on it, and if I am replacing one already, I think i'll be going through ALOT of them.

Reset the ECU again, and drive it real easy, try not to boost it for a day or 2. See if that fixes it. I would say to the Vishu relearn but that would require a boost gauge which you dont have.

Gauges are in the future, but this swap has broke the bank so far.
Would have been 10x easier had I not started with a totaled car.
