Do I have to drain the oil to replace the cam and crank seals or does the oil sit low enough in the motor so that it won't spew out when I take the old seals out? Or can I get away with just draining a quart or two? I just put fresh oil/filter in a few weeks ago.

You don't have to drain the oil at all. None will come out.
