Default odd short term fuel trim and idle hunting

I am vacationing in GA for the week and here in the last few days the car has odd misses & hesitations, today while driving slowly the car started bucking and nearly stalled like i was really low on gas (>1 gal.) but i am on a 1/4 of a tank
afterwards i was sitting idling with the ac on and watching the ecu via a obdII scanner and the STFT would drop to -28 and the car would nearly stall and shoot back to 0 and it would idle correctly.

any idea what could be causing the fuel trim to go crazy?

bad o2 sensor, bad gas, exhaust leak?

it has been very hot and muggy down here if that a huge effect

off topic: why did i have to accept the rules again before posting this thread?

anything causing a bad O2 reading could cause this, including all that you have mentioned. What vehicle, how many miles on current sensor?
