Default Engine rebuild help

I am getting ready to rebuild my 187,000 mi Subaru EJ-251 motor. My goal is to get another 200,000 out of it, and to enhance the 28-32 mpg I used to get.

I am not yet sure if it will just be taken to a shortblock, or if it will be a complete rebuild.
I have not yet done a Subaru engine rebuild, so I am not really sure where to get the parts I need to gather before I start.
Could somebody please recommend places to get:
-A good gasket set for the complete engine.
-A good timing belt kit that is complete with tensioners and bearings.
-A good replacement piston set with rings
Also, because of the miles, what should I do to the heads?

Have the heads rebuilt or overhauled to factory spec, or you can even do it yourself if you have the equipment and skills. could clean up the ports and give it an angle valve job to maximize power without changing the powerband. New valves, seats and guides. springs and lifters would probably be a good idea too. there are aftermarket cam options that boost tq but they also effect fuel economy depending on how aggressive a grind.

I have over 260K on my original motor without doing the head gaskets. I am wondering if I just want to do the heads or just get a Subaru 2.5l shortblock and rebuild my heads anyway? I will go for the STi metal headgaskets in whatever I do.

Head work is a must at this point in time and while it is extra work 187K is a lot of miles on rod and main bearings.
