Takashi will prob be your best bet as far as raw rolls go since they have the freshest fish there. It's off Market Street. Prepare to drain your bank account.

As for good all around and well priced, I'd say Ginza.

Out of the three I've tried here are my reviews:
Ahh Sushi (not downtown, in Jeremy Ranch just outside of PC) - best sushi by far, including variety
Happy Sumo - decent sushi, decent selection
Simply Sushi - good if you love rice instead of sushi, their roles were about twice as thick as anywhere else I've been because of how much rice they pack

If your in it for just the experience and dont mind being around a much of inebriated people I suggest going to Shoguns after I think 11PM Friday or Saturday night, its happy hour. Their menu is fairly limited but in my opinion its all about the experience rather than the actual food.

I personally cant tell a difference between $20 rolls and $6.00, my tastebuds are to blame..

Edit: I think its on Main Street and like 3rd South

I like Simply Sushi. Even thought it is a little on the rice-ier side. Can't beat $15 for all you can eat!!!
