I dont know if the nexus will be able to handle the texas heat in the summer

my plan is to put a wireless charging pad in the back and make the nexus removable

Walmart sells a fast charging 2.1 amp auxillary plug that will charge the N7. Costs maybe $10. 2 USB ports and 1 auxillary plug. The USB ports are a maximum of 3 amps total, so if you plug two devices in, they are getting 1.5 amps apiece.

I installed one of these into my ignition switch.

Its 3A USB DC , so you can plug the nexus directly into it and power it off that.

If you are using Timurs USB rom (with and OTG cable), it will automatically turn the nexus on with it receives power and then into a deep sleep when you power off the unit. It will only loose 3%-4% of its battery each 24 hours, but you will quickly recharge that after a short drive.
