Officers say she would have died if doctors had not performed the operation.

The woman, from Heysham in Lancashire, was taken from Oscar's wine bar to hospital at 11pm.

She was diagnosed with a perforated, or pierced stomach, and is now in a serious but stable condition.

Lancashire Police have not officially named the place where she bought the cocktail, but say Oscar's has stopped selling it.

The bar say their "heartfelt best wishes" go to Gaby Scanlon and her family "at this distressing time".

A police statement said: "The premises involved have fully co-operated with all agencies and have suspended drinks involving liquid nitrogen.

"The investigation is still in its early stages and we are still interviewing witnesses to establish the full facts.

The force said they had been warning other bars in the town about what had happened.

You derps, the drinks don't include liquid nitrogen, the glasses are dipped in it to chill them and create a misty effect. The bartender ****ed up and didn't let it vaporize, and when he poured the drink it, the remaining liquid nitrogen floated on top.

Here's the description of what I had

Using liquid nitrogen, a chef made us a molecular gastronomy version of the classic Manhattan cocktail. He swirled liquid nitrogen into a mixing bowl with rye whisky until the alcohol froze in tiny shards- no mean feat (depending on the proof, alcohol freezes at -10′F to -30′F)

Then he used the a bath of liquid nitrogen to freeze scoops of a sweet vermouth infused with bitters until a frozen outside encapsulated a soft interior. We were each given a glass with some of the crystalline rye and a homemade marsachino cherry, the ball of vermouth on top…and instructed to crack it with a teaspoon to release its still-liquid interior. It was like an essence of Manhattan, all pure flavor without the taste of alcohol. We were instantly intoxicated, charmed and amazed both by the cocktail AND by the performance; our view of what a cocktail could be EXPANDED.

Yea, they use liquid Nitrogen in a lot of molecular gastronomy, but by the time it's served, the N has evaporated. This guy obviously didn't know what he was doing.
