Default few problems after built motor

the motor in summary:

2.1l stroker, stock heads
fp green
act clutch/exedy flywheel
tons of bolt ons
modified stock baby blues, 865cc
agency power fuel rails[
gms radiator
mishimoto 160 degree thermostat

My few little problems, when I go to start it up it wont start unless I give it gas, just keeps turning over

also my thermostat gauge on my gauge cluster suddenly does not work, stays past cold the entire time I drive it. When I installed my thermostat the jiggle pin only faced like 2-3 o'clock, cannot sit at 12 o'clock, called mishimoto and they said it was normal for some of there thermostats. I was wondering if it was safe to use like that? and also my temp meter not working, I just feel like my motor is getting hotter than it should.

when my tuner was flashing in a base map he said my thermostat threw a CEL and my fans come on before I even start my car. He turned it off and my car wouldnt start at all, he said my injectors went crazy with like a 7-9% duty cycle, but when he turned the CEL back on, my car would start just fine.
