Default why does temp affect performance so much?

Is it me or does the car pull much, much harder in say 60F vs 70F?

I love the way the car pulls and the turbo sounds when temps are about 55-65F which is a typical evening where I live. Warm days are usually 70-80F and it just seems like it loses power and responsiveness; not enough that there's an issue, just noticeable.

Firstly, I have a 2008 wrx that was stage 2 OTS tuned for a couple years.
Recently went 18g, injectors, pump, PW TMIC, EBCS (thinking stock tmic was the culprit for this), and protuned on 91 @ 19psi

Basically the same could be said on both setups. Is it something in the tune? TMIC vs FMIC? or just typical for most cars?
