Default 19x8

I have a 2000 Legacy GT sedan with 19x7.5 Centerline RPMs with 225/35/ZR19 rubber on them. The offset is +42 (don't bother, I know its too low). I have my fenders rolled and they rub them ever so slightly. But now I have the Tein FLEX coilovers (meaning more clearance to the strut) and I am going to change to 19x8 rims with 235/35/ZR19 tires. What offset would you recommend I try given the extra clearance?? I can't go too far because then the problem will be rubbing issues at a full turn.
