Default RE: ECU sampling frequency?

Hey, I'm sure someone from TXS/Cobb/ecutek at least will be able to answer this:

I know that all these engine management stuff must have some FPGA or microcontroller doing the signal processing. So I'm wondering, when you read/write from the ECU, what frequency are you sampling parameters at?

Reason is, I'm doing this as a little project, converting my instrument panel to a digital display with a cool bar tach like on the S2000, and I am also wondering the pros and cons of sampling from the OBD port using a ISO to Serial converter, or the ECU, since a company (Elm electronics, www.elmelectronics.com) makes an ISO-Serial converting PIC 12F microcontroller and the OBD scanners using this chip are capable of displaying quite a lot of information. And that you can ping it serially for various ECU data. But I was looking at the ECU pinouts on Rift's ProjectWRX the other day and noticed that things like TPS, tach and vehicle speed (PWM'd?) are pinned out in analog voltages/waveforms, so it seems easier to just sample fom there...

o and also, does anyone know if the voltages from like, the fuel level sensor, the MAP sensor, fuel pressure, fuel temp, fuel injector/ignition control, MAF sensor, coolant temp, TPS, change linearly or log or what?

Maybe some questions are kind of n00b, but I apologize b/c I've never done any research into the WRX ECU, I'm just making some candid observations here based on my personal knowlege and what I've read.

maf is polynomial. map is pretty linear. tps is linear with angle of rotation. there is no fuel pressure signal.

those are the ones i know for sure.
