Default Overheating issue...

Ok you Legacy experts...here's a question for you all:
My car is a 2000 Legacy Sedan(BE). It has almost 110k miles. Car was bought new. In the last 4 years I've had some major repairs, new tranny and heads replaced twice. The last time I got my heads replaced, they also replaced my radiator too. I think I'm on the 4th thermostat too, those go like oil filters in my car. Anyway, lately my cars temp gauge has been climbing after long distance trips (more than 2 hours), yet the compression test at the dealer passed. There's also no smoke coming out of my exhaust that would indicate that my car is consuming the coolant. But when I check the reservoir levels after 2-3 weeks, it's always near empty. In a two month span, I've used up about 3 gallons worth of coolant in the reservoir and radiator. When I move my car, there is never a spot on the ground so I can't see any visible leaks. Where is my coolant going and why is my car continuing to overheat on long distance trips? The dealer had it less than week ago just to check all my concerns and found nothing. Plugs are clean, thermostat works, fans work, hoses are good, no leaks around head gasket, passed compression test, no white smoke in exhaust...what gives? Does my car just like to drink green stuff? Weird
The dealer suggested I sell the car before it surprises me again with another problem, they've only seen it in their shop 2 dozen times for every problem imaginable. Would lemon laws be out of the question now? I would sell it today but I need to keep it for another couple of months while I save for my downpayment on a house. Priorities.

First thing that came to mind was to find a new dealership. Something just isn't right here.

I've heard of a possessed car, but this is nuts! HEADS replaced TWICE!!?!!?! Not the gaskets?

Like a second opinion in a doctors office, go to another Subie dealer, QUICK! If you need to keep the car, then you need to get a serious garage.

I meant headgaskets, too lazy to write out the full description, sorry. But yeah, I may get a secong opinion. The head gaskets and radiator were fixed about 7 months ago and I think the dealership is trying to avoid dealing with the problem. If it's occuring within the same year, that means they need to replace the parts at no cost to me because it's still under warranty. I think they are tired of working on my car to be honest with you.

Have they put die in the coolant system yet? When a 'mystery' leak occurs, that's usually among the first things a dealer would/should do. This way, wherever the leak is, it will put a color on the stuff around the leak, so it can be spotted when the car is off. If they haven't done this yet, they aren't worth their salt.
