Default Indonesian Squash & Spinach Soup

1 tsp coriander seeds
1 tst cumin seeds
1 tsp tumeric
1 tsp tarragon
15 blanched almonds
1 large onion, diced
2 large garlic cloves, minced
3 tbsp vegtable oil
2 tsp grated ginger root
1 tp salt
2 cups chicken or vegetable stock
2 14-oz cans light coconut milk
4 cups peeled & cubed butternut or acorn squash
6 small handfuls fresh spinach, coarsly chopped
lots of fresh lime or lemon juice

grind the coriander, cumin, tumeric & nuts in a small spice grinder, with a mortar & pestle, or with about 1/2 cup of water in a blender.

in a soup pot, briefly saute the onion and garlic in the oil. add ginger and salt and continue to saute until onions are translucent. add stock and ground spice mixture to pot and simmer for 5 minutes.

stir in coconut milk and squash and gently simmer, uncovered for about 40 minutes until squash is tender. stir in chopped spnach and allow to just wilt. remove pot from heat, squeeze lemon or lime juice to taste and serve at once.
