Default Power-Steering Fluid Replacement

I need to replace the power-steering fluid in my Impreza and I was thinking about removing the return hose going to the reservoir and re-routing it into an empty container.
Opening the reservoir cap, have an assistant start the engine and simultaneously pouring new fluid into the reservoir. I would do this for about 2-3 minutes.
Afterwards, I would have my assistant shut off the engine and then I would put the return hose back onto the reservoir and put the reservoir cap back on.
Could anyone advise me as to whether this is an appropriate procedure or if there is a better way to do this. Thanks

Just get a turkey baster and suck out the fluid from the resevior (sp). And pour in the replacement fluid. I wouldn't suggest removing any of the lines as the seals might be compermised. Repeat the process above a few times and most of the old fluid should be gone and replaced by new fluid.
