Default Mac Question - how to launch a app from the terminal?

Mac - Unix question. How do I launch a program, like excel, safari, firefox from the terminal command line? I'm sure there must be some way to do it. I just want to stick it in as a shell alias so I dont have to use the mouse as much to launch something.

I knew it has to be something simple. Was looking in the right directory, but too much crap in /usr/bin to narrow it down.
