I have a Capresso Infinity.


New subject, I tried the froth aid tip with the air holes plugged and it was worse It's a bit frustrating. I also had next to no crema with the pressure plate removed from the portafilter, so I put it back.

The finest setting seems to be too much for my machine to handle. The second to finest setting works well with a pretty good shot time (with the pressurized portafilter). I haven't tried the finest setting without the pressure valve yet.

Fresher coffee requires a coarser grind, so this'll leave you more flexibility, instead of being tapped out at the end of the adjustments. BTW, it's REALLY hard to dial in your machine and grinder with bad coffee. I'm just saiyan.

So much hate for my choice I see Is there anything that you would approve of that's available in a chain store, even if it were something like the Fresh Market or Whole Foods?

Freshness is everything. The best coffee will suck if it's over 3-4 weeks old. If it's in a store, without a roast date, it's old. WF roasts their own beans, which sounds convenient, but they suck. They use automated air roasters; no development of flavor, ****ty profiles, it sucks. That's not even taking into account that your coffee is not only stale, but the cheapest junk they could buy, crappily roasted, then allowed to go stale just in time for your cup.

Just mail order. You can get fresh coffee 2 days out of the roaster from many roasters, not just myself. I roast every batch to order, and mail within hours, by two day USPS. You can fit 2-6lbs in a flat rate box for $11.35. There's around 30 cups of coffee per lb, with a 2lb, $45 order, that's way under $1 a cup.

How do I keep it fresh(er)? I've read that cool and dark is about the best I can do with it.

Order what you can finish within 3-4 weeks max, ideally. OR: Buy double that, and freeze half, keeping it in the freezer until you're ready to use it, then remove and leave it out.

Crema requires fresh roasted beans among other things. The pressure plate causes fake crema.

That's what I do with your stuff. I usually buy 4 lbs and then portion them out, vacuum seal, and freeze. Seems to be working well thus far.

It works very well. The main problem with freezing is people buy preground, leave it in the freezer, and pull it out every time they use it. It's already stale, and freezing/partially unthawing forms condensation, etc. Just not good.
