I personally like Hefe's (a product of living in Germany for a while), but am getting to like the complexity of a great many Ale variations right now.

seafood mostly. it goes great with mussells and clams. and I use it to make an amazing shrimp dish.

Mussells Pernod is extremely easy.

Just take a dozen mussells and saute them in their shells with a bit of oil, garlic and onion. when the shells begin to open, pour in pernod. a good amount, maybe 1.5-2 cups. throw in generous helping of tarragon. let sauce reduce. when reduced by half, hit with a splash of heavy cream and a couple ounces of butter. mix everything togther well, and serve.

are you still in ireland? if so i have a HUGE favor to ask of you. it would involve bringing back a bottle of whiskey... paddy's specifically. i will handsomly reward you. say, double the sticker price so you can get one too (or whatever else you want). my best friend and i went to ireland togather 2 years ago, and we both love the stuff. he has unsuccessfully tried to get another bottle home ever since. it would be the coolest christmas gift for a best friend EVER.... the whiskey he loves that he can't get in the states.

we brought back like 6 bottles of whiskey and poteen each, and gave most away as gifts. being stupid, we didn't realize that paddy's is not available here.

I knew there was something fishy.....

I'm drinking a local brew right now, Granville Island English Bay Pale Ale... great stuff.... not the best but good for a cheap beer
