if the torque plate does simulate the forces, then i guess it would minimize the distortion caused by the assembler that wouldnt be as methodical.
No, you torque the head studs in a particular order to ensure an even clamp across the entire head and one of sufficient force. If the block distorts it distorts(and it will). Torque plates should be torqued exactly as heads would be on a block.
