Since I'm in ESP, I'm also on 17x9 wheels.
I tend to stick with star specs as a great all round aX tire for my climate.
Which size Dunlop star spec would you go with? 245/40 (actually didn't see this size on tire racks site), 245/45 or 255/40? Maybe even wider?
The 255/40 is wider, but the 245/45 is taller... keep in mind, I have a 5 speed.

Most of us run 245/40 Starspecs or RS3's. Tirerack has discontinued the Direzza Starspec I and will be introducing the Starspec II early next year.
You'll be in STX by the way being a WRX
I believe he is just asking about tire selection since STU guys also run 9" wide wheels.
I would run as wide and small (diameter) tire as possible. A 9" wide wheel is plenty wide to handle a 265 or wider, but you may run into clearance issues. Since you are in ESP though, I believe you can modify your fenders for tire clearance...so go nuts. A smaller diameter tire will also help with the tall gears of the 5 speed.
