Ah, OK. Watch the streams of espresso; when they start to blonde, turn it off, or a bit before. Also, you can play with the taste by running water through the group until the sputtering stops, inserting the portafilter, and brewing. You can make the brew temp hotter and colder that way; typically hotter = less acidity, colder = more acidity. If it tastes burnt, brew cooler; if it's sour, brew hotter.
