Egt over 1600 degrees F are when to worry. I have read that 800-900 degrees C is normal for these cars. If you get towards the upper spectrum of your gauge just back off!
As for oil pressure, I don't think a turbo car can have too much.
I see mid 80's after warmup while driving and a minimum of 30psi at idle after warmup. Focus on the minimum more than the maximum. Stories of 100psi at startup (cold) abound on this forum.. I see 95 myself and have a cheap VDO gauge.
