No struts (other than stockers) will keep the height. The springs aren't what give the Outback its height, but there are Legacy springs from Australia (Scorpion) that do raise the car. I can't think of why you would want to raise the car and go with bigger wheels and lower profile tires though.

Anything WILL let you run 225/45-17 tires without rubbing (at least with correct Subaru offset wheels). The diameter of these is the same as that of stock Legacy GT wheels/tires and is much smaller than Outback stockers so there is plenty of room.
