So after a long road trip to Colorado and back from MN I did some testing at different speeds. According to the instantaneous MPG reading I get around 28.5 MPG going 75 MPH, 30 MPG going 70, 32 MPG going 65, 34 MPG going 60, 36 MPG going 55, and 38 going 50 (didn't feel like going any slower than that). I tested these by resetting the trip meter in 10 mile segments on my way back so they are not the most accurate. It did appear that for every 5 MPH I slowed down, I gained 2 MPG on the reading.
