Do you really need to drain any coolant and risk having issues bleeding the system? If you depressurize the system and have the new sensor ready to swap I wouldn't see you losing much coolant at all, correct me if I'm wrong. Being an HVAC mechanic I replace sensors all the time "on the fly" in hydronic systems, you just have to depressurize the system.
