If you're trying to keep your car in a state that will legitimately pass smog, at least in the stricter states, I'd leave the canister unless it's causing problems. You also might run in to problems when trying to fill up the fuel tank if you remove that stuff.

If you're set on removing that stuff, by all means go for it. I'm not trying to tell you how to live your life

As for the catch can, I'd wait on that. Personally, I'd get the engine installed and running first before installing the catch can. Just to minimize variables if something goes wrong with the engine install. Fewer things to check if you have issues.
