Distance, capacity, signal degradation, a bunch of things.
Sure the copper cable in your home isn't anything special, but the signal is only traveling a very short distance on that. Fiber all the way to the node/disto block eliminates all the crap cable before your home.
Plus a lot of newer homes are pre-wired cat5/6 anyway.
