The nav system has controls for "Subwoofer" gain... how can I tap into that for an aftermarket sub amp???

The on-screen controls are for the subwoofer output on the 24-pin Navi harness. That ouput is only used in some Foresters, for a powered sub in the rear cargo area.
You'll need to add pins/wires to the vacant positions on your factory Navi harness. See the
pin out (bottom half of post #11) for details. I actually now a cable with RCA jacks and the appropriate pins to do that. E-mail me for details (click on my username).
I'm fairly certain that grounding pin 7 enables the sub output. [Update: This is not correct. Pin 7 does something else. The sub out works even with pin 7 disconnected.]
Pins 12 and 24 are a balanced (positive and inverted components of a) mono, line-level signal. Pin 11 is ground.
Pin 23 is the amp remote-on.
I'm having a
deja vu moment here
(although, admittedly I've kept adding info to the pin-out since then).
