Any moderate mechanic can do everything from a maintenance standpoint aside from the timing belt. A jack, some stands, some basic tools, and a helper now and again. In fact, put all the money the dealer would siphon into tools, and you'll be ahead of the game.
Just make sure you document and keep receipts, to prove to the dealer the maintenance was done should warranty issues creep up.
