2 quarts is pretty friggen low! Personally I'd change the oil so i could send a sample to blackstone labs to see if there was any excessive metal content in the oil especially from the bearings (typically lead and copper). There's not much you can do if you did cause any damage but at least you'd know if you need to save up for a new short block...like the one i'm selling
Personally i've had the oil light come on while driving up hill through the rockies running 1.25 quarts low. Nothing out of the ordinary showed up when I sent the sample to blackstone labs. The car went on to live 20,000 miles more before the transmission blew up
edit: I'd personally switch over to a different oil that subarus don't drink like water
